I love scones!  They are delicious and easy and only require basic ingredients…

The trick to getting them so delicious and fluffy good is in getting them into the oven as quick as you can!  Rubbing the margarine/butter in till it resembles bread crumbs helps as well!

I use the recipe out of the Edmonds Cookery Book – it’s never failed me;


3 cups plain baking flour
50 g butter/margarine
6 teaspoons baking powder
1 1/4 cups milk
1/4 tsp salt

Sift flour, baking powder and salt into a bowl. Rub butter in until it resembles fine breadcrumbs.  Add milk and mix quickly to a soft dough with a knife.  Lightly knead.  Lightly dust an oven tray with flour.  Press scone dough out onto this. Cut into 12 even-sized pieces.  Leave a 2cm space between scones.  Brush tops with milk.  Bake at 200 degrees Celsius for 10 minutes until golden brown.

Makes 12.
